Welcome to Meatless Monday! This is a fantastic side dish that easily becomes the main dish for anytime you want to go meatless. And the best part is that is so easy to make!
Pair this with a great green salad for a fantastic meatless meal. Don’t want meat but need the protein, grill some salmon or your favorite fish to complete this delicious dish!
One can White Beans, two tablespoons fresh grated Parmesan cheese, one handful organic spinach, salt, pepper and fresh basil.
Rinse the beans and add to pot with salt and pepper. Heat to warm on stove top. Add cheese and spinach and continue to heat until the cheese is begins to melt and the spinach slightly wilts. Add basil leaves and serve.
Bonus Tip – you can also prepare this on the grill by combining all of the items in aluminum foil and sealing. Be sure to spray the foil with pan spray first.
