Veggie Gringa Devours Costa Rica

Simply baked or boiled and mashed with a little butter and cinnamon is good, 

But this is so prevalent, and such a great versatile veggie, why not have some fun with it?

I have a family recipe for squash pancakes “channeled” from my grandmother (she never actually gave me the recipe – I just somehow ended up making them like she did!)  Very easy and quite wonderful. A favorite of my dad’s.

Peel seed and cut your squash into small chunks. Put them in your blender or food processor,  add a couple of chopped cloves of peeled garlic, about a tablespoon of olive oil (salt and pepper if desired) and pulse the squash into small bits. You might have to help distribute it with a spatula in between pulses. If its stuck, add one or two tablespoons of water, just enough to get it moving.  I don’t…
