Today’s Chick Tip…..A great recipe that takes just 15 minutes to put together and your crock pot does the rest of the work…..Chicken and Artichoke Stew! Don’t let the word stew put you off for a summer time meal, this is a light and delicious dinner just right for this time of the year (or anytime if you ask me).

In your crock pot add one whole Vidalia onion, one whole head of garlic, one diced sweet potato, two cans or frozen packs of quartered artichoke hearts, 10 baby bella mushrooms cut in half, one teaspoon each lemon thyme and oregano and one handful of fresh parsley leaves and finally three tablespoons of your favorite grainy mustard. Season with salt and pepper and stir to combine. Top with six boneless skinless chicken thighs or four boneless skinless chicken breasts.

Cook on low or medium in your crock pot with the lid on for six to eight hours and then increase to high for one hour and add your favorite green vegetable. I will be adding green beans tonight!
