Don’t be afraid to use your crock pot during the day that is what it is designed for to slow cook with no worries all while you are out living your life. One of my favorite crock pot meals is beef stew. Beef Stew is very easy to prepare first thing in the morning. Take ½ inch beef cubes, toss in whole wheat flour and place in bottom of crock pot. Add red potatoes, baby carrots, green beans, mushrooms and/or whatever vegetables you choose. Fill the crock pot ¼ way with beef broth and another ¼ way with red wine. Add your favorite whole fresh herbs to the mix (my personal favorite is rosemary and sage). Cover your pot and cook on medium for 6-8 hours. Increase to high for one hour and serve with a crispy whole grain bread and Caesar salad for a great dinner!
