This week we will be celebrating one of my favorite foods, BACON, and in honor of BACON this week’s tips will be appropriately named Today’s BACON Tip…..Do you love bacon? Do you love potatoes? Why not combine them into one fantastic side dish!
No formal recipe today, just think about the number of servings you need for Parsley Red Potatoes with BACON! Cut your red potatoes in bite size pieces and place in salted cold water with one or two whole pieces of raw bacon. Move to stove top and bring to a boil, turn to to medium heat for about 20 minutes or until the potatoes are fork tender. Drain and discard bacon. Meanwhile cook bacon until it is a tad bit crispy, just past limp – drain and cut into small pieces. Cut butter into pats and fold into your potatoes, salt and pepper to taste. Fold in bacon and chopped fresh parsley. Top with shredded Parmesan cheese and serve!
