Food Chick Tip of the Day 4/19/14

Today’s Chick Tip…..A big, huge thank you to my friend Ashley for asking me to recreate one of her favorite breakfast foods, Hash Brown Casserole. This is an easy recipe that is packed with flavor! It will be a great addition to your Easter Brunch table – ENJOY!

Ingredients: 1 large sweet potato, 3 large baking potatoes, 1 pound of your favorite sausage (I used turkey with apples), 1/2 pint heavy cream, 1/2 pint low fat sour cream, 1 sprig fresh rosemary (removed from stem and rough chopped), lemon pepper and truffle salt to taste (you can use Kosher or Sea Salt as a replacement if truffle salt is not available)

Directions: Pre-heat your oven to 400 degrees. Remove sausage from casings and pan fry, breaking into small pieces. Meanwhile, wash and peel the sweet potato, wash the baking potatoes and then using a cheese grater grate all of your potatoes. In a large bowl combine all ingredients. Spray a 9×13 pan with cooking spray and spread your mixture out. Bake for 30-40 minutes or until potatoes are soft. Remove from oven, cut into squares and serve.

BONUS TIP: Make this on a Sunday and serve all week long for a quick breakfast by wrapping the individual pieces in plastic wrap or foil and either microwave or pop in your toaster oven to reheat.
